The ever-evolving dining scene in Hua Hin welcomes an exciting new addition in the trendy and increasingly popular Khao Takiab area: Les Amis Hua Hin.

Recently appointed as Head Chef, Lambert Tissot Dupont brings an impressive international résumé and a distinctly cosmopolitan perspective to the kitchen. Originally from Marseille, Chef Lambert joined the restaurant following its opening in November 2025, shaping a menu that blends traditional French technique with global inspiration.

A Cosmopolitan Culinary Vision

Having worked in Norway, the United States, Mexico, and Japan, Chef Lambert describes his cuisine as an “invitation to travel.” His dishes bridge classical French foundations with flavours and influences gathered abroad — refined, thoughtful, yet approachable.

The Experience

The meal began with a complimentary bread basket featuring a variety of styles. Judging by texture and taste alone, the bread felt fresh, handmade, and crafted from quality ingredients — a promising start.

Onion Soup

Often overlooked, French onion soup is in fact a litmus test of classical skill. If a chef can elevate this humble dish, it speaks volumes. Here, the balance was carefully judged: deeply caramelised onion broth paired with a measured, zesty cheese topping and contrasting breadcrumbs. The cheese — grated by hand — melted beautifully, binding the flavours without becoming heavy or cloying. A confident execution of a French classic.

Gravalax

A dish influenced by the chef’s two years in Norway, where he acquired a recipe from the grandmother of a fellow chef. The salmon was bright and delicately cured, complemented by confit and roasted fennel. A pâté-style cream infused with dill, coriander, and basil added herbal complexity, creating a harmonious trio of flavours.

Lamb Shoulder

The standout of the evening. Cooked for nine hours, the lamb fell apart effortlessly — tender, richly seasoned, and deeply satisfying. Notably, Chef Lambert is committed to sourcing locally, including Hua Hin lamb, which adds a meaningful regional touch.

The accompanying gravy — dark, glossy, and intensely flavoured — was crafted from lamb juices reduced with vegetables and red wine. Dried olive powder, herb oil, and smooth potato mash completed a well-considered presentation.

Accessible Yet Refined

The menu feels welcoming rather than intimidating — classic enough to satisfy traditionalists, yet layered with enough nuance to intrigue more adventurous diners. Nothing feels overly experimental or alienating.

Les Amis Hua Hin is a confident new arrival and a welcome addition that will undoubtedly help drive the culinary scene of Hua Hin forward.
